- 1½ cups self-raising flour
- 2 tablespoons grated cheese (about half cup)
- Salt and pepper to taste
- 2 eggs
- ½ cup full fat yoghurt
- Cup of frozen corn
- t smoked paprika
- 1 T vegetable oil
- ¼ red onion finely chopped
- 1 T dried chives
Method:
- Preheat your oven to 180 degrees C. (fan-bake) or 200C without fan
- Mix flour, cheese, salt and pepper together in a bowl.
- Beat the eggs and yoghurt together
- To egg mixture stir through smoked paprika and chives
add a bit more salt and pepper. - Add the egg mixture, frozen corn and red onion to the dry ingredients.
- Fold together, being careful not to over mix.
- Line a muffin tin with paper cases and spoon in the mixture.
- Bake medium sized muffins for 16 -18 minutes
or until the muffins spring back when pressed gently.
(may need more or less depending on oven - recommend checking at 15mins) - Let sit on a wire tray for 5 mins, eat whole or cut in half and add butter
